Easter celebrations might be a little different this year due to the current happenings around the world. Even if your typical dinner has to be a little different this year, there are still ways to have an amazing Easter dinner, maybe on a smaller scale or with different dishes to accommodate ingredient availability. We’re offering some great dessert recipes that allow you to make substitutions as-needed regarding ingredient availability and gathering size.
We’ve also included little tips and tricks for incorporating our Canna Trading Co. tinctures into them as well.
Easy Pastry Cream with CBD
This pastry cream can be used for filling cream puffs, eclairs, tarts, trifles and can also be used as a pie filling. It’s versatile and can be flavored any way you choose. It’s delicious without any additional flavors as well. For this particular pastry cream, we are suggesting our 750 mg Vanilla Tincture.
1 teaspoon vanilla bean paste
4 large egg yolks
2 tablespoons unsalted whole butter (stick butter)
Pinch of sea salt
¼ cup cornstarch
2 cups whole milk (you can substitute almond milk, soy milk or coconut milk)
½ cup granulated sugar or sugar substitute
Add the salt, sugar and cornstarch to a saucepan. Whisk together. In a measuring cup, whisk the egg yolks and milk together. Slowly pour this into the saucepan and keep whisking. Add the butter and allow the mixture to come up to a boil over medium heat.
Boil the mixture for 1 minute, while still whisking. Take it off of the heat and add your vanilla bean paste. Whisk to combine. Strain through a sieve (fine mesh strainer). Let it cool just 5 – 10 minutes and then whisk in your CBD tincture.
Cover with plastic wrap and chill for 2 hours before using it.
Whisk again before using it.
Flavors to add to pastry cream for Easter:
- Orange zest
- Lime zest
- Lemon zest
- Raspberry puree
- Strawberry puree
Pastry cream pairs perfectly with citrus fruit and other tart fruits like raspberries.
Easter Dessert Lasagna with CBD Whipped Cream
Lasagna doesn’t have to be an entrée. It can be dessert too! This dessert lasagna is fun for kids and adults. There are dozens of ways to customize this as well, by adding fruit and other fun flavors.
40 Chocolate sandwich cookies
1 cup unsalted stick butter
1 cup powdered sugar
8 oz. softened cream cheese
1 teaspoon vanilla bean
1 cup fresh whipped cream (recipe to follow)
2 packages of instant chocolate pudding
2 ¾ ice cold milk
1 ½ crushed chocolate sandwich cookies
CBD Whipped Cream
3 cups ice cold heavy cream
3/4 cup powdered sugar
1 1/2 teaspoon vanilla bean paste
2 droppers Canna Trading Co. Vanilla Tincture
Start by making your whipped cream so it has plenty of time to chill. All you have to do is put the heavy cream, vanilla bean paste and powdered sugar in a bowl. Using a hand mixer, whip the ingredients on medium high heat. Once the cream starts to thicken with soft peaks then add the CBD tincture.
Cover and refrigerate the whipped cream while you make the rest of the dessert lasagna.
Now it’s time to make your crust – which is just about 40 chocolate sandwich cookies crushed and then fold in the butter and make sure that all of the cookies are coated in the melted butter.
Press the crust down into a 9×13 inch glass casserole dish. Use a spatula, rolling pin or glass to press the crust down firmly.
Make the pudding mixture and spread that over the cookie layer.
Whip up the cream cheese layer with the remaining ½ cup of softened butter, softened cream cheese, 1 cup powdered sugar, vanilla bean paste and 1 cup of your whipped cream. Spread the cream cheese layer onto the pudding layer.
Spread on the CBD whipped cream.
Top with crumbled sandwich cookies.
Add additional layers of fresh fruit if you wish. Fresh strawberries, blueberries and bananas work well with chocolate and whipped cream.
Orange Cream Trifle with Orange CBD Simple Syrup Soak
This dessert is designed to taste like an orange cream popsicle. You can also make this with lime, lemon or a combination of the three. It can also be made with pineapple. The idea is to use an acidic fruit to help cut through the richness of the pastry cream and whipped cream.
**Note: For this recipe, you will use the pastry cream recipe from above as well as the CBD whipped cream recipe from the dessert lasagna.**
2 packages of lady finger cookies
1 cup fresh orange juice and the zest of 2 oranges
CBD whipped cream
1 ½ cups mandarin oranges
1 package of orange gelatin
1 cup water
What you’ll do for this recipe is break the lady fingers in half. Make your simple syrup with just the orange juice and water. When the liquid has reduced by half, let it cool and then pour it over the lady fingers.
Put half of the lady fingers in the bottom of a trifle bowl or other deep bowl. Mix up the gelatin per the package instructions. Pour ½ of it over the lady fingers. Refrigerate for 2 hours. Put ½ of the pastry cream on top of the firmed gelatin, then ½ of the mandarin oranges and ½ of your whipped cream.
What you can do with the remaining lady fingers and gelatin is put the cookies in a round cake pan and then pour the gelatin over the top. Put it in the fridge at the same time that do the other bowl. Then, when both are hardened, you can assemble the rest of the trifle without having to wait 2 hours to assemble the other half.
Turn the lady fingers in gelatin from the cake pan out onto the whipped cream layer. Repeat the pastry cream, mandarin orange and whipped cream layers. Garnish the top with orange zest and crumbled lady fingers or shortbread cookies.
These Easter desserts with CBD can be made with whatever ingredients you’re able to find that are close to those suggested here. For instance, if you can’t access milk or heavy cream, you really can just use a custard instant pudding mix instead of pastry cream. This will also work if you can’t find eggs. If fresh fruit isn’t available, feel free to use frozen.
